Bread - Loaves

Apart from looking pretty, this is a delicious bread to share with family and company!  It is flavored with Pesto and Parmesan and then topped with Cheddar cheese on top. It is not difficult to make at all.  The photos below will guide you.


  • 180g Nutri Free per Pane
  • 70g Nutri Free Rice Flour
  • 210g warm water
  • 14g fresh yeast
  • 1 tsp sugar
  • 1tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp Italian Mixed Herbs
  • Commercially Prepared Pesto
  • Freshly Grated Parmesan
  • Cheddar, grated
  • Sesame seeds


In a large bowl, pour in the luke warm water, add the sugar and yeast and stir to dissolve.  Add the flours and combine well with the water.  Add the olive oil and the salt.  Keep mixing, first with a wooden spoon and then use one hand to work the dough. Initially it will seem sticky, but flour your hands and knead the dough till it is smooth.  Cover the bowl with cling film and leave it to rise in a warm place for approximately 2 hours.

Take out the dough, knead it a bit on a lightly floured worktop as it might still feel tacky.  Try not to use too much flour.  Place the dough over a lightly floured baking sheet. Taking a rolling pin, roll the dough into a rectangle.  Cover the top with commercially prepared pesto (remove as much oil as possible) and then sprinkle the top with grated Parmesan Cheese.


Using the baking sheet as a guide, start rolling it up from the widest end.  Taking a sharp knife, slice the roll lengthwise, leaving one end intact.  Slowly, as gluten free dough is very delicate, braid the two pieces.


Form it into a wreath.  Brush the top with a mix of olive oil and water so the dough will not form a crust.  Cover it lightly with cling film and again leave it to rise for about an hour to an hour and a half.

Preheat the oven to 240C.  Put the bread in the oven and bake for 8-10 minutes.  Reduce the temperature to 200C and bake for approximately 30 to 40 minutes.

Take out the bread and sprinkle the top with some grated Cheddar cheese and some sesame seeds.  Put it back in the oven on grill so the cheese will melt and give the bread a lovely golden colour.
