Yummy Mini Corn Dog Muffins

This a snack enjoyed by both kids and adults alike!  Quick and simple to make and are lovely served warm with Ketchup or Mustard.  They make perfect party fare and go down really well with the boys when watching a game!


  • 1 cup rice flour
  • 3/4 cup instant polenta
  • 2 tablespoons of sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 cup butter
  • 2 large eggs
  • 1 cup milk
  • 4 Gluten Free hotdog sausages
  • Gluten Free Ketchup or Mustard


Preheat oven to 400F.Mix dry ingredients in a small bowl.  Set aside.Cut each Gluten Free hotdog sausage into 6 pieces.Melt butter in a bowl and add the milk and eggs.  Beat until smooth.

Add the wet ingredients to the dry mixture and combine well.

Grease a mini muffin tray and fill up 3/4 of the way full with the batter. Stick one piece hotdog in each muffin cup.

Bake for approximately a quarter of an hour or until a toothpick comes out clean.

Serve with the sauce of your choice.
