FRESH SALMON & CAPER PATTIES

We usually tend to make patties with canned salmon, the same with tuna, which are usually mixed with mashed potatoes.  This time though, I made patties with leftover fresh salmon, which I chopped into small pieces and combined it with with onions, garlic and capers!  I also used coconut flour to bind with the egg, which makes the taste a bit more interesting.  Delicious served with some lovely dressing!

Ingredients

 (Serves 2)

  • 2 skinless salmon fillets, cut into chunks
  • 2 tbsp capers, chopped
  • 1 spring onion, finely chopped
  • 1 garlic clove, minced
  • Zest of half a lemon
  • Freshly chopped parsley
  • 1/2 tsp Gluten Free Worcestershire Sauce*
  • 1/2 tsp chilli (optional)
  • 1 tbsp coconut flour
  • Salt & Pepper
  • 1 egg, lightly beaten

Method


Combine all ingredient together. Form into patties and chill in the fridge for about half an hour. Shallow fry on both sides. Serve with Dressing of your choice and salad greens.

* Please ensure that the Worcestershire you are using IS gluten free. If in doubt, omit.

    • Capers are actually the immature, dark green flower buds of the caper bush (Capparis spinosa or Capparis inermis), an ancient perennial native to the Mediterranean and some parts of Asia.Capers are most often preserved by pickling them in a brine of vinegar, salt, or wine, or by curing in salt.
