Chicken Lettuce Wraps with Peanut Sauce

A super easy and tasty quick snack! If you feel like a wrap and do not have any GF ones available, this is one healthy way you can still enjoy it! Served as it is on its own for a low carb lunch or dinner but it is also great served with a mix of some boiled white and wild rice.  Serves 4


  • Iceberg Lettuce
  • Olive Oil
  • 2 Chicken Breasts
  • 3-4 Spring Onions
  • 1 Large Yellow & 1 Red Pepper
  • 1 Large Carrot
  • 1 clove Garlic, crushed
  • GF Chicken Stock
  • Peanut Butter
  • Coconut Milk
  • GF Soy Sauce
  • Curry Powder
  • Fresh Red Chilli Pepper (optional)


Brush the two chicken beasts with some olive oil and grill until nice and golden and slice.  In the meantime, slice also the spring onions, the yellow and red peppers, peel and shred the carrot.  Stir fry the peppers and shredded carrots, adding the crushed garlic for a few minutes in sunflower oil.Prepare the peanut sauce by putting 200 ml gluten free chicken stock, half a can of coconut milk,  1/2 cup peanut butter, 3 tbsp gluten free soy sauce and 2Tsp curry powder. Bring to a boil and leave to simmer. It will thicken.Peel away the leaves from the lettuce gently.  They will look like little cups.When ready to serve, put the sliced chicken breast in the lettuce cups, place some stir fried peppers and carrots over it and then the sliced spring onions. Top with a dollop of the peanut sauce and sliced red chilli if using.  Serve more Peanut Sauce on the side. Delicious!
