THE LOVELY TRIO OF ACCOMPANIMENTS TO BEEF KOFTAS

And here is this lovely trio which you can serve with the Beef Koftas.  But it does not have to be just Koftas, all three can be served individually, or with other dishes, for example the Yoghurt and Cucumber which will go so well with a lovely hot and spicy curry.  In this case, it is known as an Indian Raita.

OK, so let’s start one by one …

CUCUMBER & YOGHURT SAUCE

Ingredients

  • 1 tub of yoghurt
  • 1 small cucumber, peel removed and chopped
  • 1 tbsp of honey
  • Salt & Pepper
  • Pinch Cumin
  • Finely chopped mint (optional)

Method

Combine all ingredients in bowl. Serve chilled.

 

COUSCOUS SALAD

Ingredients

  • 250 GF Couscous
  • 250g water
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp turmeric
  • 1/2 tsp garlic pepper
  • 1 tsp tomato paste
  • 1 scoop gf vegetable stock powder
  • Salt & Pepper
  • Olive oil

 

  • 1 red capsicum, diced
  • 1/2 cucumber, diced
  • 1 spring onion, diced
  • 1/2 cup of canned chickpeas
  • 2 tbsp freshly chopped parsley
  • 1 tbsp freshly chopped mint

Method

To make GF couscous, pour the water in a pot and add all the spices. Bring to a boil and add the 250g couscous. It will be absorbed by the water but lower the heat and keep stirring gently for about 3 to 4 minutes, adding some olive oil, halfway through. Remove from heat and leave to cool.

When coucous cools down add the rest of the ingredients and combine well.  Stir in more olive oil if desired.

 

HUMMUS

Ingredients

  • 1 can of chickpeas
  • 1 tbsp tahini paste
  • 1 garlic clove, minced
  • 1 tsp cumin
  • Salt & Freshly ground pepper
  • 2 tbsp Olive oil

Method

Whizz all the ingredients in a processor until smooth.  Pour into a bowl and drizzle with olive oil on top. Serve chilled.
