I had some thinly sliced swordfish leftover from the night before and thought of just pan frying it quickly and serving it with some deliciously fresh peach & avocado salsa on toasted gf bread.   It does not have to be swordfish, you can also use thinly sliced piece of chicken breast which will also marry well with this salsa.


  • 1 Peach, diced
  • 1/2 Cucumber, diced
  • 1 Avocado, diced
  • 1/2 Red or Yellow Capsicum, diced
  • 1 Spring Onion, sliced diagonally, both the white and green parts
  • A few basil and mint leaves, chopped
  • 1 tbsp Lemon Juice
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp honey
  • Salt & Freshly Ground Pepper
  • Chilli Flakes (optional)


In a small bowl, mix together the lemon juice, oil, honey, seasonings, herbs and chilli, if using.

Put the other ingredients in a larger bowl, add the dressing and combine well.  Chill under required.
