Red Lentil and Tomato Soup

Soups make great meals, chunky, nice and hot to warm you up in winter or chilled and fresh for the hot days in summer.  Some like this one, are so easy to prepare, with just simple ingredients that you find in your pantry.


  • 3 Tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 stalk celery, chopped
  • 2 cups red lentils, rinsed
  • 4 cups water
  • 4 cups Gluten Free Vegetable stock
  • Chilli Flakes to taste
  • 2 Tbsp ground Cumin
  • 1/2 Tsp Turmeric
  • Salt & Pepper
  • 1 can chopped tomatoes
  • Chilli Oil
  • Fresh coriander


Put the lentils and 4 cups of the water in a pot and bring to a boil.  Turn off the heat, cover the pot and leave it covered for about 20 minutes so that the lentils will absorb the water.

In the meantime, in another pot, heat the olive oil and add the onions and cook for about 2 minutes, until they become translucent. Do not let them brown.  Add the celery and garlic and cook until soft.  Add the tomatoes and cook for a few more minutes.  Pour in the vegetable stock, the chilli flakes, turmeric, cumin, salt and pepper. Cover, bring to a boil and let simmer.

Take half of the the lentils and add to the soup.  Whizz the remaining lentils and liquid to a puree and add that to the pot.  Simmer for another 15 minutes or so.

Serve the soup garnished with a drizzle of chilli oil and freshly ground pepper and a few coriander leaves.
