Creamy Dolcelatte & Walnut Sauce

Further to my previous post for Potato Gnocchi, this is a perfect sauce to go with potato gnocchi, a Dolcelatte (which is a slightly sweet blue cheese) Creamy sauce with roasted walnuts. You can also serve this sauce with normal GF short pasta.


  • 100g Fresh Cream
  • 100g Dolcelatte (Blue Cheese)
  • 40g walnuts, roughly chopped
  • 1/4 cup Parmesan cheese, grated
  • Freshly chopped Parsley
  • Sage Leaves


To make the sauce, first toast the walnuts in a nonstick pan until browned, remove and set aside. Gently heat the cream in the nonstick pan, add the Dolcelatte cheese and the grated Parmesan. Heat until it melts and the add the walnuts.  Season with salt and pepper as necessary and stir in freshly chopped parsley.

Throw in the cooked gnocchi in the warm sauce and stir gently so they are completely covered with the sauce.

Serve garnished with sage leaves and whole walnuts.
