These tasty morsels were a favorite of mine when I was little.  As a child, these were the only things I would want to eat whenever I was ill and off my mum would go, to make me a batch.  Many say, add onion, or tuna or this and that … but I love them like this … simple!  If you add other ingredients then they will not be the same. This requires just four ingredients, not counting the seasoning! Potatoes, milk, egg and some freshly chopped parsley!

Amounts are approximate.


  • 2 large potatoes
  • Dash of Milk
  • 1 egg, beaten
  • Salt & Pepper
  • Freshly chopped parsley


Peel and chop the potatoes in small cubes and boil until soft in salted water.  When done, drain the water, add a dash of milk and mash the potatoes.  Add the beaten egg and parsley, some pepper if using and combine.  DO NOT ADD ANY MORE SALT. The mixture will be thick.

Heat a little oil in a pan, and drop tablespoonfuls of the mixture and shallow fry them, turning them over so they brown on both sides, whilst pressing them down lightly with the spatula.

Lovely served with some Ranch Dressing.
