Hot & Spicy Chicken Skewers

These amounts are for 2 persons

  • 500g of Chicken Breast, filleted and cut into 2 inch pieces
  • 4 or 6 Bamboo Skewers depending on size
  • 3 tbsp Rice Vinegar
  • 3 tbsp packed brown sugar
  • 3 tbsp Gluten Free Sambal Oelek
  • 3 tbsp Gluten Free Soy Sauce
  • 3 tbsp Gluten Free Sriracha Sauce
  • 1 tbsp grated fresh ginger
  • 1 garlic clove, minced
  • 2 tbsp peanut oil
  • Black sesame seeds
  • Spring onions, sliced


Soak the skewers whilst you prepare the marinade and the chicken. This will prevent them from burning when in the oven. In a bowl, combine the vinegar, brown sugar, sambal oelek, soy sauce, sriracha sauce, garlic, ginger and oil.  Put this marinade in a freezer bag, add the chicken, close the bag and toss to coat. Leave to marinade for at least an hour. Preheat oven to 180C. Thread the chicken pieces onto skewers. Place them on a baking tray lined with baking paper. Brush generously with the marinade and place in the oven. Keep checking the skewers, turning them over and basting with the marinade to ensure that the chicken is completely cooked and does not dry out. Take out the chicken, turn the skewers over again and sprinkle them with some sesame seeds. Change to grill for a few minutes. Serve drizzled with the reduced marinade and sliced spring onions.
