Greek Brown Rice & Vegetable Salad

photo(62)I made Moussaka and wondered what I could serve with it.  I did not feel like eating just a Greek Salad with it so I combined a Greek Salad’s ingredients with Brown Rice, being a bit more nutritious than White Rice.  I love the result! Here is the recipe! (Serves 2-3)


  • 200g brown rice
  • 1 cup chickpeas
  • 1 cup corn (or one small can)
  • Dozen cherry tomatoes
  • 1 small cucumber
  • 2 spring onions
  • Kalamata olives
  • Olive Oil
  • Lemon Juice
  • Fresh Mint
  • Fresh Origano
  • Garlic Pepper
  • Chilli Flakes (optional)
  • Feta cheese, crumbled
  • Red Onion, sliced into rounds
  • Salt and pepper to taste


Start by boiling the brown rice and in the meantime, you can prepare and mix the other ingredients.  Chop the spring onions, peel and chop the cucumber and quarter the cherry tomatoes.  Place in a bowl, large enough to add the rice to it later.  Add the chickpeas and the sweetcorn, the fresh herbs, chopped and the olives.  Sprinkle it with freshly squeezed lemon juice and a drizzle of olive oil.  Add the chilli if using and the garlic pepper and season.  Combine.

When the rice is ready, drain and cool under cold running water.  Throw the rice into the vegetables and mix well.  Place in a serving dish and place some red onion slices on top.  Crumble some feta cheese on top of the onions and drizzle with some olive oil.  Garnish with a mint sprig and serve.
