CRISPY & HEALTHY SAUTE OF VEGETABLES

This delicious mix of vegetables can be served as a side dish for any dinner or it can also double up as a mains for a meat free dinner! It is also lovely added to some boiled and cooled pasta to make a pasta salad.  It must the the easiest recipe ever, really.  You can just saute normal cherry tomatoes together with the other vegetables, but making them this way does make a difference to the finished dish!

Ingredients

  • 1 Yellow Bell Pepper, chopped
  • 1 Red Bell Pepper, chopped
  • 2 large Zucchini, sliced
  • 1 small Aubergine, chopped
  • 1 Onion, diced
  • 2 garlic cloves, minced
  • 1 cup of cherry tomato confit*
  • Freshly chopped Parsley
  • Chilli Flakes
  • Salt & Freshly Ground Pepper
  • Flaked Almonds

Method

Throw some olive oil in a large pan or wok, add the onions and saute for a couple minutes, then add the aubergine.  You might need to add a little more oil as Aubergines absorb a bit of oil.  Add the remaining veggies, the garlic and chilli flakes if using and keep cooking, stirring all the while until veggies are cooked.  Finally add the tomato confit and chopped parsley and combine with all the vegetables.  Season and place in serving dish.  Sprinkle with toasted almond flakes.
