CHEESY POTATO SANDWICHES

A different way of serving potatoes! I came across this on an Italian Magazine and immediately tried it. Sooo good!  It is great as a side dish but can also make a lovely snack!

Ingredients

  • 8 medium sized potatoes (choose those that are similar in size and shape)
  • 100g Bacon or Speck
  • 150g Scamorza Cheese
  • 2 garlic cloves, minced
  • Couple Rosemary Sprigs
  • Butter
  • Salt & Pepper

Method

Wash and peel the potatoes and then boil in salted water for 10 minutes.  Drain and leave to cool until you can handle the potatoes.  Slice them lengthwise. On all eight of the halves, make little cuts on the rounded tops. (see photo).

Preheat oven to 180C.

Chop the rosemary finely and mix it with the minced garlic.  Chop the bacon and then slice the Scamorza cheese into thin slices.  Sprinkle a little of the garlic-rosemary mix on top of the potato halves that were scored.

Take the other halves of the potatoes and gently hollow them out a little and mix this with the remaining rosemary-garlic mix as well as with the chopped bacon.  Put this mix back in the hollowed out potatos and place 2 slices of Scamorza Cheese on top.  Place the scored potato half on top and secure with a toothpick. Do the same with the other potatoes.

Place them on a baking paper-lined oven dish and top each one with a knob of butter.

Bake for approximately 20 minutes until the top starts turning golden brown.
