Mmmmm perfect for the hot summer months! Deliciously healthy too! The Vodka is optional, but it turns this into a great adult starter!


  • 4 tomatoes, roughly diced
  • 1 red onion, roughly chopped
  • 1 celery stick, roughly diced
  • 1 cucumber, peeled, seeds removed and roughly chopped
  • 1 red bell pepper, roughly chopped
  • Juice of 1 lemon
  • 500 ml tomato juice
  • 1 tbsp freshly chopped coriander
  • 60 ml Olive oil
  • 1/2 to 1 tsp Sriracha or Tabasco Sauce
  • 1/2 tbsp Worcestershire Sauce (ensure it is gluten free)
  • 1 tsp Balsamic Vinegar
  • 1- 2 garlic cloves, minced
  • Salt & freshly ground pepper
  • 2 tbsp Smirnoff Vodka (optional)


Put all the above ingredients in a food processor and pulse until everything is combined. If you prefer it smooth, then blend rather than pulse. Chill for at least one to two hour before serving. Serve garnished with slices of cucumber and mint leaves.
