BAKED LOW CARB PARMESAN ZUCCHINI FRIES

Ever missed chips but you keep away from them because you know you’ll feel too guilty afterwards?  Well, this is a healthy ‘cheat’ version of fries but still have all the ‘yumminess’ you crave.  And they are so simple to make too!

Ingredients

  • 4 zucchini
  • 1 egg, beaten
  • 1/2 Gluten Free Corn Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 tsp Dried Italian Herbs
  • Pinch Turmeric
  • 1/2 tsp Garlic Pepper
  • Salt & Freshly Ground Pepper

Method

Wash and dry the zucchini.  Top and tail them and then slice them thickly lengthwise.  Cut each length in half.

Line a baking sheet with baking paper.  Preheat oven to 220C.

Mix together the breadcrumbs, cheese, herbs, turmeric, garlic pepper and seasonings.  Place in a soup plate.

Place the beaten egg in another soup plate.

Take each zucchini ‘chip’ and dip in the beaten egg,  remove excess and drop into the breadcrumb mix, turning with a fork to completely coat.  Place on the baking sheet.  Do the same with all the ‘chips’.

Spray lightly with a mist of oil and put in the oven.  Bake until they turn golden, turning them half way so they will crisp on both sides.

Serve on their own or with some of your favorite sauce.
