Amaretto Strawberries in an Almond Coconut Crust

This is a healthy, very simple, not overly sweet, yet elegant dessert!  But the best thing is … you can make this so quickly!


  • 1 cup almond flour/meal or finely ground almonds
  • 1/2 cup shredded or desiccated coconut
  • 2 tbsp coconut oil or butter (softened)
  • 1 tbsp Maple Syrup
  • 1 tbsp light brown sugar
  • 1 egg white
  • 1 cup diced strawberries
  • 2 tbsp Amaretto
  • 1/2 cup whipping cream, whipped
  • Large strawberries, sliced lengthwise, as garnish
  • Mint


Heat oven to 180 C.

Combine the almond meal, desiccated coconut, coconut oil or butter, maple syrup, sugar and egg.

Divide mixture among four ceramic tart moulds, pressing evenly into bases and up the sides.

Bake for 13 to 15 minutes until fragrant and golden brown. Do keep watching and checking it so it will not burn.

Let cool. You can remove from mould or leave in mould, as you prefer.

In a small bowl, combine strawberries with the Amaretto liqueur. Preferably leave for at least half an hour for flavors to develop.

Before you are ready to serve, spoon some of the chopped strawberries into the base of each tart.  Pipe or spoon some whipped cream onto each tart and top decoratively with the sliced strawberries. Dust with icing sugar and garnish with mint sprig.  Serve immediately.

Makes 4 small tarts.
