This is such a delightfully easy and delicious recipe, just add the ingredients to the whisked eggs and bake! It really is called a Friand rather than a slice. Friands are cakes made with almond meal, whisked egg whites, butter and powdered sugar.


(makes 12 slices)

  • 110g almond meal/flour
  • 70g gluten free all-purpose flour
  • 150g icing sugar
  • 1 tsp baking powder
  • Whisked egg whites of 4 eggs
  • 150g melted butter, cooled
  • 1 tsp vanilla extract
  • Squeeze of lemon juice
  • 150g fresh blueberries
  • 35-40g white choc chips
  • Extra icing sugar, for dusting


Preheat oven to 160˚C.  Prepare a baking tray or dish by greasing and lining it with baking paper.

Combine the sifted gf flour, icing sugar, baking powder and almond flour in a mixing bowl.

Make a well in the centre of the dry ingredients, pour in the eggwhites, melted butter, vanilla and lemon juice and mix well until all the ingredients are combined.

Pour this mixture into the prepared baking tray. Scatter the blueberries and chocolate chips over the top.

Place in oven and baked for half an hour or until a skewer comes out clean when inserted in the middle.

When cool, slice and dust with icing sugar before serving.
